  • Looking for Paella Recipe

    Has anyone a good Paella recipe? Tried the Delia one...it was awful!

        I used to make pseudo-paella, cos it didn't contain meat
        This is Not a recipe:-
        Boil rice in water with saffron/turmeric. Throw in some peas. Drain off rice.
        Meanwhile, fry courgettes, mushrooms, onions, beans, whatever and add the rice.

        I also call this Sortofstirfry and Bitlikearisotto.

                  I fry off lots of onions, garlic and tomatoes in olive oil. Cook till golden brown then add the rice, fry for a further 3 mins and then add 2 glasses of white wine (recipe for 5-6)
                  In a separate bowl have a mix of stock, i normally use vegetable or fish (of course you can use chicken etc) with added saffron, pimento/paprika (smoked is nice for a change) a pinch of cayenne pepper, a little oregano and lots of salt. Slowly add to the rice, slowly cook for another 10 mins (Spanish would never mix but i do not like a burnt bottom so i mix every couple of minutes)
                  Now add any other veggies, i choose peas, peppers, more tomatoes etc, also add any fish at this point, ideally raw prawns, clams etc as they will add their juices to the mix. or chicken, rabbit if you choose too (think the meat may need to be in from the start, sorry i don't eat meat)
                  Carry on adding the stock till the rice is nicely cooked. I prefer mine a little saucy so you can soak up some juices with a bit of bread. Do not forget to put a handful of parsley in at the end and serve with lemon wedges. I also like a spoon of homemade alioli on the side. yummy
                  I grow 70% for us and 30% for the snails, then the neighbours eats them

                      There are lots of different paella recipes - depends on the region. google and you'll get loads to try.

                        Thanks Patchninja, Just wondered if anyone had a favourite...as I said the recipe we used was not the best!

                          I would try a Jamie Oliver recipe as he's been to Spain!
                          From his book Jamie does....
                          Heat oliveoil in large pan. Add 2 raw chorizo sausages, cut up and 300g pork belly, skin removed and chunked.
                          Fry about 10 mins. Addchopped green and red pepper, garlic, onion and parsley, salt, pepper and pinch saffron.
                          Cook10 mins.
                          Prepare 400G clams or mussels
                          Add 300g paella rice and 200g jarred peppers in oil. Stir til rice coated 400g tinned toms and 800ml chicken stock. Check seasoning and simmer15 mins. Add mussels/clams and 12 large prawns, 150g squid, 150g green beans. Perhaps add a little more stock, squeeze some lemon and serve with extra emon wedges.

                          There are versions with chicken, rabbit, other fish - it was oroginally a peasant dish where people used whatever they had to hand. I think this recipe looks like a fabbo base for any changes you want to make.

                            Will have a try at that Patch, thank you. I like Jamie Olivers recipes and use quite a few as it is. Will let you know how it goes.
