  • Christmas fig and cherry jam advice please!

    I spotted this recipe and thought it might be worth giving it a try as I have kilos of sweet black cherries.

    Thing is , it says Morello cherries which aren't as sweet.
    I'm worried it'll be very ,very sweet cos the figs are sweet as well.

    So- how would you adapt the recipe...add juice of 2 or 3 oranges perhaps?

    And so.....

    I presume it means 2lbs fresh figs?
    Could I replace them with dried figs soaked in the orange juice perhaps??? ( using less of them?)

    I'm pretty rubbish/ new to jam making- but typically I'm going for complicated recipes which need tweaking!


    Any advice would be appreciated ( yeh-and I know the bit about not running before you can walk )

    Oh - and nope- I don't intend to use the canning method either!!!!

    I would be inclined to add lemon juice in quantity rather than orange. Orange can be a bit overpowering. Morello cherries have a very distinctive flavor where as sweet cherries do not have the flavor you would expect.
