  • Dehydrator recipes?

    Not sure if this should be here or in the cooking recipe section...

    Anyhoo,
    Rather than hijack fishpond's thread I'm starting another to ask for dehydrator recipes and tips.
    There are several dehydrator threads about buying them etc and mention is made of courgette crisps, sun dried type tomatoes, root veg crisps, banana chips and fruit leathers.

    I have a cheapo dehydrator that I use primarily for making kale crisps.
    I would very much like to make all the things listed above this year. Internet searches give very contrary advice.
    Please can we have some tried and tested recipes and ideas to help us make the most our dehydrators please?

    For fruit leathers, I just cook up seasonal fruit (blackcurrants, raspberries, strawberries or anything else that you have) with a little sugar to taste, or not if you really want to be healthy. Mix with apple puree, spread over baking parchment on the tray of the dehydrator and "cook" until it is hard but still pliable. The edges tend to go more quickly than the middle so try and make it the same thickness all over. Cut into strips and roll up in fresh parchment and store in the fridge. They don't last long in my house though.

      Courgette crisps - slice thinly (2-3mm), dribble with lemon water and season to taste. They shrink to about 50% of the size you put in so the bigger courgettes are better. They take about 12 hours to do. I put a mix of pepper and minimal salt on them, or chilli flakes/smoked paprika. I put it on 45-50C and rotate the shelves half-way through (cheap dehydrator).

      Banana chips/apple crisps - similarly slice thinly, dribble with lemon water to stop browning and leave for 12 hours at about 45-50C

        Courgette powder is good, just dry slices totally then blitz in a processor. Store in jars and use in sauces etc as a stock base.

          Also dry loads of foraged mushrooms for use over the rest of the year.

            Pears are superb, I don't bother with lemon juice just dry them until still pliable. If you ever find them on the reduced counter pineapple is also rather delicious, again catch them while still pliable.
