  • What Do You All Do With Big Pumpkins?

    I'm a real pumpkin and squash lover and usually eat my squash roasted. My question regards BIG pumpkins. I have three huge hundred weights which don't make good roasting as they're quite watery and mild flavoured. Any tips on cooking? I'm thinking along the lines of soup but I'm not actually that keen on the pumpkin soup I've made before! Thanks in advance.

    In the past I have done pumpkin pie, curried pumpkin soup, pumpkin fudge and pumpkin cookies all of which went down well with everyone who had them.

      Thanks NG! Now, pumpkin fudge and pumpkin cookies would never have occurred to me. They'll go down very well with husband and son.

        There are huge amounts of pumpkin recipes, especially in America. Halve the sugar at the minimum. (I previously lived there).

        I roast mine and leave it to strain for a few hours if it's a more watery type. The liquid is used as stock and in stews, souls etc, even instead of water in porridge.

        There are also pumpkin chutney recipes, candied pumpkin, the Thanksgiving favourite with pumpkin i stead of sweet potato (roasted, mashed, topped with marshmallows and baked).

        Have you also tried the sweet versions of roast pumpkin with cinnamon or nutmeg? Especially delicious with coconut cream or in curries.

          I think pumpkin soup always needs LOTS of leeks. Rosiepumpkin, I would never have thought of draining it. Great idea.

            Pumpkin puree is so versitile - make it up and freeze batches It can then go in cakes, soups, stews, smoothies, mashes, sauces - loads!

            I'm a bit dissapointed this year, as I won't have any to store - I do have some pumpkins, but they're not that nice to eat (forgot the name) - so instead we'll carve them and store for use as decorations :/

              Grow smaller ones.

              I grew a big pumpkin the first year on the allotment and had to get someone to help me get it in a wheelbarrow. The girl across the road carved it and it looked fab.

                  I did a complete pumpkin meal for friends one night.
                  We all wore something yellow - even the dog had a yellow ribbon on her collar.
                  Toasted pumpkin seeds to nibble, pumpkin soup, roast pumpkin and other veg, and pumpkin pie.
                  Glad to see the back of that big pumpkin

                    A neighbour once made me a big pan of what she said was West Indian curried pumpkin soup and it was absolutely gorgeous. Sorry I don't have a recipe for it and she moved house.

                          I will be turning my 6 remaining pumpkins into lots of different things tomorrow. Don't know about making more soup ( even though it's very nice ) as I have 10 portions in the freezer already! So this thread has been very helpful.
