  • Collard Greens

I've just been reading an article about collard greens.
What does anyone know about this vegetable? I always thought it was a collective name for the likes of kale, cabbage and other dark leaved vegetables.
Apparently not, as i have just discovered its a vegetable in its own right.
Has anyone grown this and any other info?

In the glory of the garden.

I know Collards are popular in the American South where they are usually cooked long and slow with bacon or ham hocks and served with quite a bit of the cooking juices. (Or the juices are saved and made into a soup with more greens and beans)

It's definitely a veg in it's own right as you've heard. Kale can be substituted, but cooks much faster. I have read that collards are meant to be the healthiest of the cruciferous veg too (just not trendy yet!)

I don't know anything about growing it though. Hopefully someone else will know more!

You can get seeds from moreveg.co.uk (small quantities) and from ebay.

I think it tastes just like loose-leaved Spring cabbage, or the milder tasting kales.
