  • Botulism

    I've been looking into preserving stuff this coming yr and then also read all about botulism 'depressing' so my question is ??? Is drying chillis and garlic not in oil safe as in just air dryed and left hanging from something ? What about tomatos what can I do with gluts

      If your hanging your chillis, keep them away from your nuts...........

            There are a few recipes around for chillies in oil. I make sure my chillies are dried, slit a hole in the skin, boil in vinegar and then heat up the oil ( not olive) and add chillies and simmer. Bottle in hot, sterilised jars. I don't keep them hanging around for long-just in case!
            Nigellas chilli jelly recipe, is fab. Freezing works well and pickled chillies are lovely.

              I plant soft neck garlic and then plait it and hang it from the shed roof, taking home one skein at a time. It lasts me all year.

              Tomatoes I cut in half and slow roast in the oven with basil and garlic and a drizzle of olive oil. They and are frozen on the baking tray, then packed in bags or boxes and take hardly any room in the freezer.

              When they come out they are even good in salads & they cost a fortune in the supermarket.

              I also roast sweet peppers and freeze them

                I bottle tomatoes as a sauce every year by pasturising them, works well and is very safe. Although botulism is a concern if you follow reliable methods then you'll have no problems what so ever.

                Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

                Which one are you and is it how you want to be?
