Having set my Brunswick and Ailsa Craig onion seeds at the end of December, they are now showing nicely. However, I am not sure just as to what stage do I put them in pots. Any suggestions would be welcome.

Are they indoors or out? Are they sown in a tray or individually in modules? I'd wait until the roots are filling the compost quite well. Try this thread from last year:
