  • Stuffed bell peppers

    I wrote a small series about bell/sweet peppers this week. One of the posts was about easy bell pepper recipes, and this one is a favorite of mine:

    Ingredients:

    - 4 bell peppers (I used yellow and red)
    - 1/2 pound ground beef
    - 1 clove garlic
    - ½ small onion
    - 1 can tomatoes with liquid
    - 1/2 cup uncooked long-grain rice
    - 1 tablespoon brown sugar
    - 1/4 teaspoon dried basil
    - Salt and pepper to taste
    - Shredded cheese

    1) Preheat your oven to 350 degrees F.
    2) Cut the tops off each pepper and clean them out. Also carve out the center ribs to make room for the stuffing. Mince the garlic and onion, and cut up the tomatoes.
    3) Take a large saucepan and cook the peppers in boiling water for 4 to 5 minutes. Remove the peppers from the pan and rinse them with cold water, then set them aside.
    4) Take a large frying pan, put it on medium heat and brown the ground beef. Add garlic and onion. After a minute or 2, add the tomatoes, rice, brown sugar, basil, salt, and pepper. Cover the frying pan and reduce the heat to simmer. Cook the meat mixture until the rice is tender (takes about 30 minutes, then remove the pan from heat.
    5) Place the peppers in a baking dish and stuff them with the meat mixture. Top them off with shredded cheese and bake them for 25 minutes.
    6) Enjoy!
