  • Should potatoes be stored before cooking?

    Hello all,

    I was wondering if early potatoes (or any other potatoes for that matter) cook better if stored for a while after harvesting? I've noticed that they cook much faster than shop bought, I'm always turning them to mush! I wonder if perhaps they need a few weeks for the water content to settle or something? Or I'm just a bad cook?

    I too have noticed fresh potatoes do seem to be watery, I leave my at least a week unless we are short of spuds.

      You really need to keep an eye on them, or else steam them

        leave them to mucky to dry out well before preparing and cooking. I always cook all my veg in a pressure cooker and use the water for gravy.

          Freshly dug spuds do cook quicker and are also more prone to turning into mush. Keep checking them with a sharp pointed knife while boiling and take them out the water as soon as they are about ready, or as already said steam them. I think after they've stored a while some of the natural the sugars turn to starch and they'll boil like shop spuds then.

            If you have never eaten little,fresh dug,steamed potatoes,you have not lived ,i am lucky to have a potato/veg scraper for my kenwood,wonderful for those little ones,and carrotts,i personaly,always steam veggies,and have no bother,boiling seems to split them up,
