  • another marrow recipe

    Hi,
    thought i'd share this with you, I came up with it at the weekend as I seem to have rather a glut of lovely yellow striped marrows...

    1 large marrow
    1 pack of cous cous (I used ainsley harrietts sundried tomato one)
    some bacon lardons or just cut up some streaky bacon
    1 small onion chopped
    mozarella cheese
    2 ripe tomatoes - sliced
    basi leaves

    1. make up cous couse as per instructions
    2. sweat off onions and garlic add bacon
    3. cut marrow in half lengthways(I didn't peel as just picked) scoop out seeds. Season inside.
    4.mix bacon,couscous etc together
    5. put mix into marrow
    6. arrange tomato slices and basil on top. add torn chunks of mozarella, drizzle with olive oil
    7. cover with foil, bake in oven 180 degrees for roughly 30-40 mins until marrow is tender.
    8. serve with green salad and enjoy!

    Not quite the same but similar..........
    Couple of courgettes (or marrow) sliced and sauteed in butter with a generous amount of shredded mint
    Packet of couscous (used the parsley and mint one)
    Some strong cheese, cut into chunks
    Cherry tomatoes quartered

    1. Make up couscous,
    2. Cook courgettes
    3. Mix cheese into couscous when cooked but still hot so cheese softens
    4. Pile courgettes on top
    5. Decorate with tomatoes and whatever takes your fancy.

    All done within 10 minutes tops
