Half the peaches, remove stones. Put into a large glass jar.
Put 1KG of gran sugar on top of peaches.
Buy the cheapest vodka/gin you can find and pour into jar covering peaches.
Put into a dark cool area and turn the jar every week.

    Enjoy next year.

Jam is also easy. 3lb of fruit, 1/2 pt water, 3lb sugar, quarter your peaches and put them in a big pan with the water. Simmer till they start to break down, and then add the sugar and proceed as for any kind of jam (boil till it gets to setting point, which is when a blob of the jam on a cold plate starts to get a skin on it when you push it along with your finger). If you are worried about it setting properly, use jam sugar, which has the setting agent (pectin) in it already.

Let us know how it goes!

Peach jam is just delicious and the whole house smells fabulous while you are making it.

From each according to his ability, to each according to his needs.
