too many cabbages

  • too many cabbages

    we've had cabbage every day for days and i still have umpteen left! any ideas what i can do with them?

    I don't know how but it is possible to freeze cabbage (it must be coz you see it in the supermarket) or you could send me some

      shirley i would happily give you some if you were nearer. i gave some to my neighbour yesterday and she told me she had "serious cabbage envy"...it would appear they are pretty good!!

        I remember going to visit my uncle near Haddington and walking into his front room where he had a cabbage sitting in an armchair - it filled the whole chair!!! I just look forward to the day I manage to get one to heart up

          Hi Scottishnewbie,

          We use our excess cabbages for lots of things, they can be made into sauerkraut very easily, or add them to anything sauce based that you are cooking (curry, pasta sauces, chilli, etc) When cooked as part of a sauce they freeze very well, will bulk out the dish to make it go further and add a nice crunch (with little calories too)!

          You can use them to freeze, blanch them first though, but we usually find they will stand quite happily for a few months, so dont worry about using them all up at the same time!

            Isn't Haddington a sandstone area, Shirl, and sedentary rock can result in quite a high natural pH...? Or perhaps Uncle added garden lime aplenty, that seems to be the secret of hearting up giant brassicas...

            But then what to with them?! Well you could make sauerkraut I s'pose Snb, but it's one heck of a fag (though the recipe below claims not...) and many people hate it anyway!

            For later use as standard cabbage you can shred/blanch/freeze it or shred/dry it if you have the facilities (but I personally don't do that coz cabbage in various forms is, like kale and chard, more or less an all-season veg anyway...)

            If it's not too much of a sacrifice most grazing animals think it's a real treat! If all else fails I have a couple of wormeries... lol, sorry, this is def not helping....

                not sure but i think they might be golden acre/primo - something like that anyway

                  Golden Acre Primo will stand for up to 3 months without going to seed, so you should be able to use them as you need them! One of my fave varieties of cabbage, lovely tight crisp heads that make great coleslaw!
