  • Sweet Cucumber Pickle

    I tasted this at my mum's whilst visiting last week and just made myself a batch last night, its yummy.

    Makes aprox 6 hunny jars.

    2 Medium Onions
    2 Large Cucumbers
    12 fl oz Cider Vinegar
    12 oz sugar (i used less (8oz) as mum's was quite sweet)
    1 tsp ground turmeric
    1 tblsp Mustard Seed
    2 tsp celery or dill seed ( i left out as didn't have any)
    2oz course sea salt

    Peel & finely slice onions, thinly slice & quarter cucumber, place in bowl with salt & leave for 24hrs. Rinse in water and drain well.

    Put vinegar & Spices in a pan with sugar & stir to disolve sugar, add cucumber & onion. Bring to simmer & cook for 2 mins, scoop out veg into jars.

    Return syrup to heat, boil for 5 mins then pour into jars to cover vegetables.

    Easy peasy & quick too!

    Sounds yummy, I have a glut of cucumbers at the moment, I think i'll give this a go, Thanks.

        I made Bread and Butter pickles after reading about them in one of Flummery's posts and gave them to my son (who adores pickles) - he said they were excellent and has nearly finished them (already!). This recipe sounds even better and I have a glut of cukes too. Nice one! My only problem is getting enough jars - have got all the neighbours on jar alert and it's not enough. What do all of you do? I have thought about creeping out at dead of night and raiding people's recycling bins!

          i save all jars - pasta sauce, coffee, gravy granuals etc but i am very near to running out. I now have friends & family on jar saving duty but can't get enough of the smaller ones - i may have to buy some from Lakeland.

            Why not join your local freecycle ...

            People are willing to give jars to those who'll use them rather than take them to the bottlebank ... I've had quite a few from them and thankfully not had to buy any

            ps: Thanks for the cucumber sweet pickle recipe - will definately give it a go!

                so what did you think of the pickle? it never lasts very long here unfortunately, i can eat it just on its own!
