  • raspberry jam with frozen ones???

    Please can someone help me i have tons of frozen raspberrys and wonder if i can jam them from frozen.
    and if so has anyone got a good recipe, i realy dont want to mix them with other fruit

    Yup, you can certainly use frozen raspberries If you know what weight they are already, then just put them in your jam pan with an equal weight of sugar and heat gently to defrost and dissolve the sugar. Once the sugar is all dissolved, then boil hard to a set as usual. If you don't know what they weigh, I'd be tempted to defrost them in a large bowl, and then weigh them.

    What I usually do is defrost them in the jam pan, and gently simmer for a little while, then put them through the jelly bag and make raspberry jelly - you get lots more juice if they've been frozen

    Basically though, you want an equal weight of sugar to raspberries, plus a squeeze or so of lemon juice to help with the set. If you decide to make jelly, it's a pound of sugar to a pint of juice plus the lemon juice as for jam.
