  • Lime Marmalade Recipe

    In response to Mariell's request for a Lime Marmalade recipe. I managed to get several limes from LIDL at 10p a pop (thanks Mariell!)

    Lime Marmalade

    12 limes
    4 kaffir lime leaves**
    5 cups/1.2 litres/2pints water
    6.5 cups/3lb/1.3kg warmed white sugar

    Halve the limes and slice thinly*, reserving any seeds. Tie the seeds into a muslin bag with the leaves and put into a large, non-reactive pan with the sliced limes.

    Add the water to the pan and bring to the boil. Cover and simmer gently for 1.5 to 2 hours, or until the rind is very soft. Remove the muslin bag, leave to cool, then squeeze it over the pan to release the juices.

    Add the sugar to the pan and stir over a low heat until the sugar has dissolved. Bring to the boil, stirring occasionally, until setting point is reached (220f/105c). Preserve in the usual way.

    *Important as Lime rind is tough as old boots.
    ** I have not been able to get these (I assume it will be ok without? Perhaps slightly sweeter as the leaves are bitter?)

    I love Lime Marmalade - thanks for the recipe, might pop into Lidl for some limes and make some myself.

        The only reason I know they sell them is I was in Julian Graves today and saw them. If it make you feel any better I didnt buy any either, now I wish I had.

          i made some yesterday is it meant to be tangy,.bitterish....mind you i find limes bitter anyway...lol
          I made the lime jelly this morning and i have to say it looks good....just a pity i have decided i dont like marmalade...lol...
          wont go to waste though as i made whisky marmalade using marmade yesterday and with the lime im going to make a small basket for my dads birthday and make some lemon curd
          so it wont go to waste
