    Does anyone out there have a recipe for ginger marmalade they can recommend. I have various recipes but before I start deciding which one to try I thought I'd just see if anyone could recommend one they have tried.

    I haven't tried this recipe, but I might, it looks straight forward enough.

    GINGER MARMALADE.

    Ingredients

    1 1/2 cup chopped peeled fresh ginger root,
    2 cup water
    2tb lemon juice
    3 cup sugar
    1 pk (3 oz) liquid pectin

    Instructions

    In a large heavy pan, combine ginger, water, and lemon juice.
    Bring to the boiling.
    Reduce heat and cook until the ginger is tender - about 10 minutes.
    Stir sugar into ginger mixture, return to boiling, then add pectin.
    Boil rapidly, stirring for 1 minute, remove from the heat.
    Allow to cool slightly.
    Fill sterilized, warm jam jar's just short of the top, seal.
    Water bath in hot oven for 10 minutes.

    Young ginger or stem ginger shoots are the best for this marmalade. Avoid
    the large woody roots.
    This stores well and works very well on plain sweet scone's
