    Hi there
    am looking for advice on the best way to freeze toms for future use in cooking

      I tend to halve them and place in a roasting tray cut side up, sprinkle with a little salt and a drizzle of olive oil and roast them in the oven for 40-60 mins on medium gas (well OK, whatever temp the oven's set on if I'm making something else)
      I find that this concentrates the flavour and removes some of the excess water from them.
      Then blitz in the blender and freeze.
      For pizza sauce, or more intense flavour, sometimes I throw some cut up onions or a couple of crushed cloves of garlic onto the roasting tray too. If you're adding herbs, just put them in later though as they can get burnt.

        You can freeze them just as they are Safhyre.
        If they're small just put them in a freezer bag and freeze.
        If they're big cut them in half, spread on a tray til frozen then tip into a bag.
        To use later just cook them from frozen.

        From each according to his ability, to each according to his needs.
