  • Chocolate courgette cake

    Just made a chocolate courgette cake, indulgent or what! I'll dig extra hard tomorrow to use up some of the extra calories. House smells lovely!

    Just thought,a slice of this would definitely count towards one of your 5 a day!!

                Ok, I'll load it tomorrow, could do a picci, but just looks a large square choc cake! It's in a book called Welly to Belly, by Andi Clevely.

                But you are welcome to pop along to Kent for a slice!

                        Chocolate courgette cake

                        Can be eaten hot or cold with custard, cream, ice cream, or on its own!

                        125g(4.5oz) soft unsalted butter
                        115g(4oz) soft light brown sugar
                        2 small eggs
                        310g(11oz) plain flour
                        1 tsp pure vanilla extract
                        110ml (4fl oz) plain yogurt
                        2tsp bicarbonate soda
                        0.5 tsp mixed spice
                        30 g (1oz) cocoa powder
                        1 tsp ground cinnamon
                        0.5 tsp salt
                        340g (12oz) courgettes grated
                        225g (8oz) plain chocolate, broken into small pieces

                        - preheat oven to 170C/ 325F/gas 3
                        Prepare 25cm, 10in, square tin by greasing it and lining with 2 crossway strips of baking parchment

                        - beat butter with sugar until light n creamy. Add eggs one at a time, with spoonful of flour to prevent curdling. Add vanilla extract and yogurt,mix well.

                        - sift remaining flour with other dry ingredients, stir into mixture with grated courgettes. Turn into tin. Sprinkle surface with chocolate

                        - bake for 45 mins or until centre of cake is firm and inserted skewer comes out clean.


                        Delicious!
