  • Carrot Jam

    Just played the guessing game with Dai the Jam, our local jam maker! He gives me a spoonful to taste and I have to guess the ingredients - and this one had me completely foxed.
    Bright orange/apricot colour and the texture of apricot puree, but the predominant flavour was orange.
    Apparently its a wartime recipe using carrots and orange zest. I wondered whether anyone here had made it - well recommended

      Grated Potimarron skin in apricot jam give a very orange colour too!

      Squash 'Potimarron' (Winter) - Pumpkin, Squash & Courgette Seeds - Thompson & Morgan

      ...bet that would also work well with orange jam!

        He said it was a Wartime recipe and then went on (and on) about Dr Carrot and RAF fighter pilots' eyesight!
        I've found this recipe that may be it

                Made Mrs Beeton's carrot jam - but no-one would eat it, so in the end I gave it away.

                No one is adventurous here (except me, that is )
