  • Racking off delay - will it spoil the wine?

    Hello. I made gooseberry wine a few weeks ago. The destructions said to rack off into a clean demijohn when the fizzing ended. This coincided with DH filching my racking off hose thingy for something he was making, and then it took me longer than it should have to get a replacement (I literally bought the last one to be hand in town).

    Long and short of it is the wine's been sat for far longer than it should have with the sediment in the demijohn. Will this have wrecked it? I'll rack it off anyway this afternoon.

    Should be OK, I've left wine on its lees for ages. Best thing to do is have a taste - just to check, you understand

        a few weeks isn't a problem if it's under airlock - i've just lost 20 gallons because i left wine in buckets (not properly airtight) which is fine when fermenting as it leaves a layer of co2, but not good for longer periods as the co2 disappears and oxygen gets to the wine and mould grew on top - it took months though - serves me right for being so busy!

          Agreed with the others, just remember tasting is an obligation

            Shouldn't cause any problems, I have had some of mine sat for quite long periods.
