  • How long do you leave your elderflower to infuse?

    Hi all.
    am trying my hand at making some elderflower liqueur, and I've been reading really different infusions times, anything from 2 days to a month of leaving the flowers in the Vodka? How long do you leave yours for?

    In Vodka, a month is fine, infusing for syrup 24 hrs will do.
    Eat well, live well, drink moderately and be happy (hic!)

      Just make sure the syrup is cold or it'll kill the natural yeasts.
      I'm only here cos I got on the wrong bus.

        Mikey, for an infused syrup, you want to kill any wild yeast, for Elderflower wine infusing in a hot syrup you also want to kill any wild yeast! so that you can add your yeast of choice, mine is nearly always EC1118/Champagne Yeast for Elderflower..
        Eat well, live well, drink moderately and be happy (hic!)

          I use the natural yeasts for my elderflower "champagne" but obviously want to kill them for things like cordial.

            Thank you all for the advice. The flowers came out of the cordial after 24 hours this morning, and of 2.5 litres I'm left with only 1 litre as I had guests and they all insisted on taking a little bottle home , so more will be made.
