Evenin' folks, hope you've had a good week. just making dinner. Roast potatoes, parsnips, mashed carrot and swede, runner beans and of course courgettes all from the garden, the only thing not from the garden is the lamb. feeling quite smug at the moment

Default Courgette/marrow chutney

Hi Scary55, (mb here)
The recipe I used came from Good Houskeeping (1979), my standard book and is asa follows:

3lb marrow/courgette, peeled, chopped into small pieces and salted overnight.
1/2lb shallots (I used onions small diced)
1/2 lb apple, peeled, cored and chopped
12 peppercorns (well a small handful)
small piece fresh ginger, peeled, chopped small
1/2 lb sultanas
8oz demarera sugar
1 1/2 pint vinegar (I''m going to try using less than this next time as it's just a tad sloppy)

Rinse and drain salted marrow, add apples and shallots(onion), sugar, sultanas and vinegar.
If you like you can tie peppercorns and ginger in muslin, but I chucked the lot in - gives a nice 'tang' and the taste experience of soft peppercorn is wonderful.

Bring to boil, reduce heat and simmer until thick consistency - can take all morning (or longer).
Makes about 4lb so get your jars ready while it's simmering

I looked online recently for a recipe using green beans as we have a glut this year, Apart from using cornflour to thicken and mustard instead of ginger and sultanas it was similar so if you've got a glut it may be worth an experiment.

I had to double everything up cos the courgette BW brought back weighed nearly 8lb!!!! (btw, do courgettes turn into marrow, or have I invented a new recipe??)

Regards
Jane

Very well thank you!!

With husband away my crafting fingers are becoming decidedly itchy... Usually we have been too busy for me to even have thought about my sewing machine But with him away and nothing for me to get my teeth stuck into here, I have found myself watching you tube videos of felting and freehand machine embroidery.
Someone help!!!!

Thank you Jane - shall definitely be having a go at that, sounds delish and anything that uses 3lb of marrow/courgette is OK in my book
