  • Late Night Baking....

    .....is what I do when I'm bored. It's a completely different ball game now that we're low-carbing/diabetic.

    I've just given in to an urge to bake sugar/flour free chocolate cake. I know. And's going to be 11pm before it's ready. And I think it's going to bomb....I subbed half the ground almonds for coconut flour, AND THEN I read up about coconut flour and found out that it needs twice the liquid that ground almonds needs. Except I'm ten minutes into baking time by now - tooooo late!

    Well, time will tell.....

    Good luck. My mother in law cooked a similar chocolate cake for father in laws birthday one year. It had quite a lot of beetroot in it. Looked lovely but tasted revolting. Sort of food that lands in your stomach and felt like it was still there hours later. Hope yours is more successful.

      I've made beetroot cake before, and it was very good - couldn't taste the troot, just as well because I didn't like troot then. I'm thinking this cake is going to be a little dry and possibly won't need as long baking. If it's edible it'll probably have to be washed down with a cuppa.

      I did tweak it some more - I have access to professional flavourings, so I put in some concentrated rum essence to go with the coconut. About 30 minutes to go.....

        Didn't taste of beetroot and not really chocolate either, quite bitter. Rum sounds good.

          Back in the day when I was trying out the Atkins diet, I used a recipe by Nigella - oranges boiled for a couple of hours, lots of eggs and some almond flour. That cake is absolutely beautiful Instead of sugar, I used sweeteners, and ya really couldn't tell.

              LOL No that's true I made it just the other week actually. Makes your house smell like Christmas when the oranges are on the stove

                Okay...looks fine so far. Took it out of the oven, so it's cooling now. Hopefully I can cut a slice and have it before bed with some milk.

                Can't tell if it smells good as DD has just burned her stirfry.

                          I always end up regretting my late night bakes...you can guarantee that as soon as I get it in the oven, tiredness hits.

                            The cake was lovely!

                            Cheered me up as I haven't lost any weight since I started low-carbing just over a month ago - I blame the hypothyroidism. At 3.2g carbs per 100g it's very good....a thin slice weighs about 35g. The rum essence didn't do anything, couldn't taste it at all.

                            I did get tired a while after it went into the oven but, had I gone to bed, there's always a Son or DD to get the cake out of the oven in my absence. Thing with that is, there's usually no cake left in the morning!
