    Hi All
    I was having a pint with my gamekeeper pal, and he very kindly said he would drop a few fresh mushrooms in to me. Sure enough when I open my front door the next day there is a bag of mushroome, some the size of dinner plates. IDEAS PLEASE.

    Normally called "Horse Mushrooms" This size are just right (good and strong) for packing out a curry. Cheers, Tony.

      When we've foraged a big haul we usually dry a load for out of season use (we use a dehydrator but you can do it in a low oven), big ones are nice baked with breadcrumbs, herbs and cheese on top, risotto, pasta, pate (you can make a lovely one by sweating a load of mushrooms in garlic butter and then mixing with cream cheese, a dash of lemon juice and pepper before blending. Really good. To be honest I like mushrooms in practically anything but it does depend on which varieties you have as to what they're best for, some (like giant puff balls) look spectacular but to be honest are rather tasteless so I never bother with them now.

      Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

      Which one are you and is it how you want to be?

        Big doesn't necessarily equal strong - see comment above about giant puff balls

          Having found some big mushies on the school field, I have had a few omelettes and risottos! I think it is going to be a good year for fungi

            Get hold of a copy of HFW's every day veg book if you can. There are 2 recipes for mushrooms that are worth the price of the book alone. One red wine ragout served with the best ever polenta and another with white wine and orzo pasta. Just brilliant.
