  • Bread making disaster

    Everyone here is still asleep, and I'm so annoyed with myself, you lot get to hear about it
    I was very organised last night, making the bread dough before going to bed, and putting it into the fridge. This morning I kneaded it down, then put it into the microwave on defrost for a minute, fine, no probs, still pretty cold. Now I would normally give it another minute on defrost, but goodness knows what I did set it on, because when I came back to it not only was it warm, but the bottom bits had started cooking, and I didn't realised until I'd mixed them through the dough
    I've made the cinnamon bread for DD's breakfast, but it will be a bit weird in places. Also I thought I'd just do 6 rolls for the plain ones, as I'd lost some dough trying to pick the cooked bits out. Then when I put them on the tray, there was 8 very small ones.
    To cap it all, I put them in the oven, then forgot, so they are a bit brown. Perhaps I should go back to bed.
    I could not live without a garden, it is my place to unwind and recover, to marvel at the power of all growing things, even weeds!

      Sorry you've had such a frustrating start to the day BarleySugar, I hope it gets better as it goes along

      I must admit to being very puzzled at you microwaving your dough Why do you do that?

        Putting the dough on defrost for a SHORT time speeds up the rising process. As it's so cold in the fridge overnight it rises a bit, but a couple of short blasts usually gets it ready to shape quite quickly.
        Somtimes I shape it before putting it in the fridge, then bake straight away as it's usually risen enough, which works pretty well. I just didn't feel like doing it last night , wish I had now.

          Aaaah, I see!
          Yeah, I usually do the first rise, then the second knead and shaping before putting it in the fridge. Then I put it in the oven when I turn it on, so that the dough warms up as the oven does

            Why do you put the dough in the fridge at all?

            Couldn't you just cover with a damp tea towel and leave on a worktop at room temp overnight - and eliminate the microwave stage?

              I haven't got a fridge big enough for putting bread dough into. Many years ago I used to mix the dough in the morning, leave it in the bottom of the pantry while I was at work, shape it as soon as I got home, fresh bread rolls with supper, and a loaf that was cold enough to put in the breadbin, ready for breakfast.
              These days we usually cheat and use the machine.......

                I put some dough in the microwave on auto-defrost to speed things up a bit a while ago. It didn't get very warm, but it refused to rise. I concluded that the microwaves kill the yeast. I don't know whether I was right or not.

                  my bread making disaster was to put all the ingredients in the machine, turn it on, wait for the love smell - turn it out and munch - easy

                  Nope, I had forgotten to put the water in - it was very very messy

                    Tried it leaving the paddle out - that didn't go well either!
                    Life is too short for drama & petty things!
                    So laugh insanely, love truly and forgive quickly!

                            Microwaves don't kill the yeast, (unless it gets hot enoughto kill them ) the uncooked bit rose OK, it's just they were a funny shape and texture. When OH commented, I told him he could make it himself if it wasn't good enough .
                            However out of the 8 cinnamon rolls, there's only 2 left, he ate 2, DD ate 4, so it couldn't have been that bad.
