Hi i bought apple trees in bush form, but can i train these to become espalier & grow them against my fence?

If they are still fairly young you should be able to train them. You may have to tie the branches down a section at a time or change the angle gradually over time depending on how pliable the branches are. Also try not to prune more than a third of the tree out in a season as the tree may go in to shock. Apart from that you should be good. Hopefully others will soon give some more advice.
