Default Peach tree confusion

Can anyone tell me why all the books say you should grow Peaches as either Bushes or Fans?
I would like to grow mine as an Espalier as it suits the shape of the tree. Would this be ok?

Yes- That's what we are doing, copying our neighbour's.
He had over 100 peaches last year!!!!

It's in the soil at the back of the greenhouse and we have fastened wires across the back to which the braches are fastened.There are I think 4 branches at each side about 16" apart.
We used bamboo at first to guide the branches.
I read somewhere that you should only allow one peach per square foot.
It's only 8ft wide and standard height so I expect a maximum crop of 50 in a good year.
This is it's 3rd year and we had 12 fruit off it last year.
It's going to be frustrating to keep it small, but it's better than none eh??
