I've just looked up the recipe for Schnapps and it seems quite starightforward. A bit like the old gin thing. Equal volumes gin, fruit and sugar, shake the bottle around every so often for six months or so then strain and bottle. This works with blackberries, plums, damsons, passionfruit and raspberries. (probably others too, this is just tested to date
