Aubergine Recipe Just in case you don't find this one in any of the vegetarian cook books you might like to try aubergine this way.
Cut the aubergine into very thin slices longways
Grill them
In a bowl, mix 2 kinds of grated cheese (the ones you like)
Some pine nuts and chopped olives (if you like them)
Whatever herb you like
And just enough liquid (wine, water, stock) to make mixture a bit stcky
Put a spoonful of the mixture on one end of each aubergine slice and fold the other end over the top
Lay the stuffed aubergine parcels out in a buttered oven dish
Make your own favourite tomato suace and pour it over the aubergine
Sprinkle with grated cheese, breadcrumbs or your own favourite topping mixture and put in the oven for 20 - 30 mins until bubbling all through.
Serve with pasta and salad. Enjoy. |
