I love fishing for trout - my OH says I'm strange for a female because I think its only fair to put them out of their misery as soon as I get them out of the water - but at the £ I pay to go fishing, I think its only fair.
My fave way with trout, is like above - put the cleaned fish in a large piece of oiled tin foil - put a piece of lemon and fennel feathery bits in the body cavity, season then add a bit more oil and a generous splash of white wine. Seal the parcel completely then cook in either a fish kettle or a bain marie. The timing depends on the size of the fish - just keep your eye on it so it doesnt overcook, although using this method it would be very hard to overcook it. Enjoy! dexterdog
