Lucky you Snadger. You can stuff them and bake them. I stuff the belly with a mixture of Chopped mushroom, spring onions, chopped ginger and grated orange or lemon rind. Moisten the mixture with the orange juice and a dash of soy sauce. Stuff the mixture into the trout , put in a baking dish and pour over some more orange or lemon juice. Cover with tinfoil and bake in the oven for 40 mins. Serve with your own salad and new potatoes. A great favourite in this house. Enjoy.
