Italian Turnip and Rice Soup Hi, Been doing some turnip recipe searching myself.
Here's a soup recipe I've found that sounds blooming lovely. Heat 2tbs. butter and 1 tbs. olive oil in saucepan and toss 1lb (sorry I'm not metric) peeled and diced turnips, cook until lightly browned. Add 3 pints chicken (or veg) stock and simmer covered for 10/15 mins. Add half a cup of arborio rice and again cook covered for 20 mins. Season, then garnish with chopped parsley and parm. cheese if wished.
