i've just made elderflower cordial, and for that you need citric acid or tartaric acid to help preserve it. (though this can be hard to get hold of, my chemists no longer stuck it because it can be used in drug use) i put mine in plastic bottles and put the excess in the freezer, in which case it lasts ages! but that of course depends on how big your freezer is, especially with grand designs like yours.
