Default Pear and Apricot Chutney

2lb 12 ozs pears
5oz ripe tomatoes
5oz bramley apples peeled and chopped
5oz onion finely chopped
2 tespoons ginger
1 teaspoon salt
450 ml of white wine vinegar
150z caster sugar
15 ozs apricots roughly chopped

Put all the ingredients except the pears into a large preserving pan and bring to the boil and then simmer for 30 mins then add the pears and simmer for a further 30 mins. The mixture will be slightly syrupy when it is ready and there wont be much liquid visible.
Allow to cool a little and then pot up into sterilised jars, it will keep for at least a year.

Serve with cheese and biscuits or with your favourite curry or just on a ham sandwich. Enjoy, I know we do.
