i make a really nice butternut squash soup which we all love, cut a squash in half take out seeds, drizzle with garlic olive oil salt and pepper (fresh ground) and cumin seeds (sprinkle over) wrap loosely in foil and bake in oven until soft cool slightly and scoop out all the flesh, cut onion into small pieces and fry until soft but not brown in a little veg or olive oil, add squash and stir, add chicken stock (about a pint) then some milk or cream and warm through,, season to taste,, whizz until well blended and serve with crusty bread. yum enjoy!!
