i mentioned this on the marrow thread, but nigel slater's courgette and potato crumble (with marrow in place of courgette!) is fabulous, as are all his recipes. i can't remember it exactly (but could copy it out if you want it). basically fry onions in butter, add potato and marrow, fresh rosemary and a little bit of stock (and if you have it - white wine!). cook for a couple of minutes. put in a dish, and add some cubes of crumbly cheese (cheshire works well). make the crumble topping with breadcrumbs, more rosemary and more cheese. |
